Wines by Design in Rochester

Wine making has been around since before recorded history. So, why the sudden interest? It's all about some changes that have occurred in the wine-making process. Until recently, all juices needed to be either used fresh, or kept chilled until ready to process. This caused a lot of problems for home vintners. The innovation of flash pasteurization and hermetically-sealed containers allowed juices to be blended by the world's best vintners and shipped anywhere without regard to distance or time of year. Wines By Design uses this stable juice, both as a concentrate and as 100% juice, in our process. We sell the juice kits and then the customer starts the fermentation by adding yeast to the juice. We then warehouse the new "must" until it is ready to bottle. This will usually take about 6 weeks. A kit contains enough juice (or concentrate) to make 28-30 bottles of fine wine; all this with no equipment to buy and no mess in your home. While the "must" is working our customers visit the store to pick out custom labels and nurture their creation. A party often happens as you and friends bottle, cork, cap and label your new wine. At this time, you and your friends can taste your wine and customize the sweetness. Snacks add to the festivity of this process.
